To prepare this dish, place 4 pounds of whole chicken thighs, clean, and skinless previously seasoned with salt and black pepper, in the 10-liter Pressure Cooker. Add chickpeas, soaked the night before in water, carrots, onion, coriander, garlic, chipotle pepper, and water. Be careful not to fill the pot more than ⅔ full. Cover, close and turn the regulating valve towards the pressure icon and cook at medium-high temperature. Once the valve whistles, and releases steam (in approximately 15 minutes), reduce heat to medium and cook for 30 minutes. Then, turn off the heat, turn the valve and wait for all the steam to come out, before opening the lid.
Serve the broth with avocado, radishes, tortillas, and lemon slices, and enjoy this home-cooked dish!

In a 4-quart Mixing Bowl, stir orange and pineapple juice, chicken broth, condensed milk, and soy sauce. Stir well with the Precision Series Whisk. Set aside. Cut the boneless pork pieces; place them in a 10-quart Mixing Bowl and season with cumin, salt, and black pepper. Preheat the 10-liter pressure cooker at medium-high temperature for about 3 minutes. Add pork and sear it for about 6 minutes, or until it’s completely brown on all sides; stir sporadically.
Pour the reserved liquid mixture, bay leaves and pieces of orange over the meat in the pressure cooker. Cover, lock, and turn the valve towards the pressure image. When the valve whistles, reduce the temperature to medium and cook for 45 minutes.

This stew, which translates to "bone with hole" in Italian, is a recipe you’re sure to enjoy! A wintertime delicacy, Osso Buco falls off the bone and leaves you wanting more! For the stew, take the 6-liter Pressure Cooker and add the Osso Buco and beef broth. Do not fill the pot over two-thirds full. Cover, lock, and turn the valve with the arrow pointing towards the pressure icon, and cook at medium-high temperature until it whistles. Then, reduce heat to medium and cook for 20 minutes. While the meat is cooking, combine parsley, garlic, lemon juice and lemon zest, salt and black pepper to taste in the 2-quart Mixing Bowl to make the gremolata sauce.
When the first cooking is finished, turn the valve to release the pressure and wait for all the steam to escape. Open the lid and add carrots, celery, onion, garlic, tomatoes, white wine, black pepper and salt. Cover again and cook for 15 more minutes.

Beans with Pork is an ideal dish for the pressure cooker, because it concentrates all the juices and flavor, creating soft and tender meat accompanied by the savory flavor of beans.
To prepare it, add broth and beef in the 6-liter Pressure Cooker. Cover, lock, and turn the regulator valve with the arrow pointing towards the pressure icon; cook at medium-high heat. Once the regulator valve whistles and releases steam (in approximately 12 minutes), reduce heat to medium and cook for 30 minutes.
While it cooks, preheat the Square Griddle at medium-high temperature for 3 minutes. Immediately, reduce heat to medium and place in tomatoes, onion, and habanero pepper. Cook 3 minutes per side and let them cool. Carefully, pour all cooked ingredients into the Royal Prestige® Blender with cilantro and salt. Cover and blend in speed 2 for 15 seconds.
Serve this delicacy with the chili tomato sauce, garnish with radish, cilantro, onion, and avocado. As a final touch, add a splash of lemon juice and enjoy!
